All you need are fresh strawberries, good milk chocolate, and a little ghee to help the chocolate melt smoothly and get that classic solid “bite.”

I worked for a caterer when I was in college, and we made dozens and dozens of these for almost every party we catered. So I guess I can consider myself an expert in the chocolate covered strawberries department! Also consider making Brownies dipped in chocolate and Cookies dipped in chocolate!

Recipe tips

  • Be on the lookout for the best looking strawberries. You want bright red strawberries with nice, fresh green tops. If they are mostly uniform in size, so much the better. Use firm strawberries that are not too ripe or mushy.
  • Dry your strawberries completely. Any drops of water can cause the chocolate to harden or slide.
  • Ghee is what makes the chocolate nice and smooth when melted, and it also gives the dipped strawberries a shiny shine. Alternatively, you can use coconut oil instead of ghee.
  • The chocolate you use in these chocolate-covered strawberries is entirely a matter of your preference. Use chopped chocolate or chocolate chips.
  • For the prettiest finishing touch, gently twist the strawberries as you remove them from the chocolate.
  • If the chocolate begins to thicken while dipping, gently heat it again.
  • If you don’t want to put a “foot” on the bottom of the dipped strawberries, be sure to scrape the dipped strawberries down the side of the dipping bowl to get rid of the excess chocolate that will collect on the bottom of the strawberries.

If you don’t have a double boiler, it’s okay to do this in a heatproof bowl over a pot of simmering water. Alternatively, you can use the microwave to melt the chocolate in short batches, stirring after each batch.

  • Grab the strawberries by the leafy part and dip them in the chocolate. Allow excess chocolate to drip away and then place on wax paper. Repeat with remaining strawberries.

advice: Melt some white chocolate + shortening separately and place in a piping bag to sprinkle decoratively over the chocolate-dipped strawberries.

  • Make sure the strawberries are completely dry before dipping them, as water can prevent the chocolate from sticking.
  • The shortening helps the chocolate melt smoothly and coat evenly.
  • Chocolate-covered strawberries are best enjoyed the same day, but can be refrigerated for up to 48 hours.
