Nearly 1.6 million dozen eggs have been recalled due to possible salmonella contamination after an FDA alert, with Kroger and Brookshire stores in five US states affected.

Eggs are a powerful source of nutrients, containing a wide range of essential nutrients, including protein, vitamins, minerals, healthy fats, and more. This rich source of nutrients is under threat.

According to the U.S. Food and Drug Administration, Midwest poultry services are recalling approximately 1.6 million dozen cage-free white-shell and brown-shell eggs produced in Texas, as they are likely contaminated with Salmonella enteritidis, according to a Reuters report.

The recalled eggs were available at Kroger (KR.N) grocery stores in Texas and Louisiana and Brookshire’s in states including Oklahoma, Arkansas and Mississippi, according to the Food and Drug Administration.

The FDA added that brands have not yet reacted to the news report, and the good news is that no illnesses associated with poultry service eggs have been reported in the Midwest until the announcement. According to the U.S. Food and Drug Administration, Midwest Poultry Services has stopped distributing eggs produced on its farms in Texas.

One egg yolk is said to contain about 55 calories along with other essential nutrients, including vitamins (Vitamin A, D, E, K, B), minerals (iron, phosphorus, zinc), and healthy fats, such as omega-3 fatty acids. Egg yolks are also one of the best dietary sources of choline, an important nutrient for brain health, liver function, and metabolism. According to experts, one egg yolk provides 147 mg of choline. According to a study titled “Egg yolk as a new source of peptides with antioxidant and antimicrobial properties,” egg yolk is rich in bioactive peptides and proteins such as phosvitin, lysozyme, and cysteine, which have antioxidant, antimicrobial, antihypertensive, immunomodulatory, and anticancer activities.

It is also reported that eggs are traditionally considered a natural source of compounds with antioxidant properties, including many proteins, phospholipids and some micronutrients such as vitamin E, vitamin A, selenium and carotenoids. It is known mostly from lecithin, which is widely used as a lubricant, surfactant, and emulsifying agent. Egg yolk can also provide lysozyme, cystatin, avidin, phosvitin, and phospholipids. On the other hand, egg whites contain protease inhibitors that may reduce the digestion of amino acids. However, they can be easily destroyed by heat, highlighting the importance of cooked eggs as a better source of bioavailable protein. Egg whites have also been shown to provide antioxidant, anti-fatigue, visceral fat-reducing, muscle-building, and gut health benefits. Egg whites also do not contain cholesterol, which may be beneficial for individuals with high cholesterol levels or risk factors for heart disease.
