This is everything you would expect in traditional retail. A combination of delicious textures and flavours, a touch of creaminess and a crunchy golden colour. This simple, delicious meal is perfect for brunch for a crowd, or dinner for one.

Ingredients You Need for Root Vegetable Hash with Avocado Cream [Vegan]

  • 1 tbm vegetable butter
  • 1/2 c onion, cut into cubes
  • 2 cloves garlic, minced
  • 1 c turnip, cut into cubes
  • 1 c sweet potato, cut into cubes
  • 1 c broccoli florets, cut into cubes
  • 1 c green cabbage, chopped
  • 2 vegetable sausages, cut into cubes
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1/4 c fresh coriander, chopped
  • 1 tsp balsamic vinegar
  • 1 medium avocado
  • 1/4 c cashews
  • 1/4 – 1/2 c vegetable broth

How to Make Root Vegetable Hash with Avocado Cream [Vegan]

  1. Melt the butter in a cast iron skillet over medium heat. Add onion and garlic and sauté until translucent, about 5 minutes.
  2. Add kale and sweet potatoes and stir to combine. Let it cook for 5-8 minutes.
  3. Add broccoli and greens. Continue cooking until bright green and starting to become tender, another 5-8 minutes.
  4. Add field roast, salt, pepper, cumin, coriander, and vinegar. Reduce the heat to low and let it cook until the field roast is hot and the flavors meld.
  5. Blend avocado, cashews, and vegetable broth in a blender until smooth.
  6. Serve with a spoonful of avocado cream on top. Garnish with more cilantro.
