In the same spirit, our cocktail menu nods to the classics, but also incorporates all kinds of Chinese and Asian ingredients and spices.

Pandan gin
10 grams of fresh pandan leavesGreen part only
175 ml of rice gin

To drink
25 ml of pandan infused rice gin (See above and method)
15 ml of white wine
15 ml of chartreuse green

Roughly chop the pandan leaf, then place it in a blender with the gin and fizz. Strain through a fine sieve, ideally lined with muslin, to leave you with a vibrant, dark green gin.

To prepare the drink, measure the gin, vermouth and Chartreuse into a glass filled with ice, stir and serve.
